Equipment
- Oven Safe Pan OR Cast Iron Skillet (12" or bigger)
Ingredients
- 1 tbsp olive oil
- 2 lbs chicken thighs bone-in, skin-on, about 6 (I USED BONELESS, SKINLESS AND IT WAS FINE!)
- 1/2 tsp salt or to taste
- 1/4 tsp pepper or to taste
- 3 cloves garlic minced (best garlic mincer for under $10!)
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 3/4 cup chicken broth low sodium or no sodium added
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes chopped
- 1/4 cup Parmesan cheese freshly grated
- 1 tbsp fresh parsley chopped, or basil for garnish
Instructions
- Preheat the oven to 375 F degrees.
- In a large, oven-safe skillet heat the olive oil over medium-high heat.
- Season the chicken generously with salt and pepper on both sides then add it to the skillet skin side down (if using skin-on chicken) for 4 to 5 minutes until golden. Flip and sear the other side for another 4 to 5 minutes.
- Take the chicken off the pan, and place it on a plate while we whip up the DELICIOUS SAUCE!
- Turn the heat down to a medium and in the same skillet add garlic, oregano, and red pepper flakes. Brown if for a minute....., then stir in broth, heavy cream, sun-dried tomatoes, and parmesan cheese.
- Taste for seasoning and add more salt or pepper if you want.
- Bring the sauce to a bubbly simmer, plop the chicken (carefully lol) in the skillet, skin-side up. (If you have skin-on chicken)
- Put the oven safe pan in to the preheated oven and bake until the chicken is cooked through, 17 to 20 minutes.
- If you're super fancy.....garnish with parsley or basil and serve over rice/potatoes or with a side of veggies.
