This "Marry Me Chicken" Recipe is all You Need

Equipment

Ingredients

  • 1 tbsp olive oil
  • 2 lbs chicken thighs bone-in, skin-on, about 6 (I USED BONELESS, SKINLESS AND IT WAS FINE!)
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper or to taste
  • 3 cloves garlic minced (best garlic mincer for under $10!)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 3/4 cup chicken broth low sodium or no sodium added
  • 1/2 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 1/4 cup Parmesan cheese freshly grated
  • 1 tbsp fresh parsley chopped, or basil for garnish

Instructions

  • Preheat the oven to 375 F degrees.
  • In a large, oven-safe skillet heat the olive oil over medium-high heat.
  • Season the chicken generously with salt and pepper on both sides then add it to the skillet skin side down (if using skin-on chicken) for 4 to 5 minutes until golden. Flip and sear the other side for another 4 to 5 minutes.
  • Take the chicken off the pan, and place it on a plate while we whip up the DELICIOUS SAUCE!
  • Turn the heat down to a medium and in the same skillet add garlic, oregano, and red pepper flakes. Brown if for a minute....., then stir in broth, heavy cream, sun-dried tomatoes, and parmesan cheese.
  • Taste for seasoning and add more salt or pepper if you want.
  • Bring the sauce to a bubbly simmer, plop the chicken (carefully lol) in the skillet, skin-side up. (If you have skin-on chicken)
  • Put the oven safe pan in to the preheated oven and bake until the chicken is cooked through, 17 to 20 minutes.
  • If you're super fancy.....garnish with parsley or basil and serve over rice/potatoes or with a side of veggies.
